Montefiascone and dairy company

Guided tour through the alleys of the charming village of Montefiascone located in a dominant and strategic position on the edge of the southern caldera of the Volsini mountains. Significant are the impregnable Rocca dei Papi, one of the safest fortified centers in the area, and the Cathedral of Santa Margherita (1500) with its imposing dome and the splendid Romanesque church of San Flaviano.

At the end, transfer to a dairy farm that extends over an area of 120 hectares where 300 buffaloes are raised, which graze freely in the fertile fields of the company, and 10 quintals of buffalo milk are transformed daily into high-quality products.

The philosophy of the short supply chain finds its maximum application in the Caseificio Aziendale: everything is produced and processed within the company. Starting from buffalo milk, in addition to mozzarella, a wide range of other products are produced: normal and salted ricotta, butter, provola, scamorza, primo sale, stracchino, yogurt, a wide range of fresh and semi-mature cheeses from raw buffalo milk, all gastronomic specialties recovered from the ancient dairy tradition imported from the native areas and reinterpreted in a modern key, with a completely artisanal and high-quality process.

After a tasty and light lunch of cheeses and cured meats, we will spend some time inside the company to witness the production process of mozzarella and get to know the buffaloes up close, belonging to the Mediterranean breed, introduced into Italy by the Lombard king Agiulfo in the 6th century AD and originally from Asia.
